Cigar and Balsamic......

I got a newsletter ....ok mail shot.....from Cigar Sense extolling the virtues of parings with cigars. This one was pairing a drop of a genuine balsamic vinegar whilst smoking a cigar. I had a really nice balsamic my brother-in-law brought over from Italy, and gave it a go tonight with a Vegueros......Wow! Quite an amazing sensation, which really enhances the flavours/aroma from a good Cuban.....mouthwatering!

has anyone else tried balsamic or an unusual pairing with a cigar?

I got the same newsletter and tho gut it was an interesting idea. Good to see you tried it with good results! May have to give it a whirl!

I must admit, I was a tad skeptical to start with. Bu follow the instructions and use a genuine DoP of balsamic keeping the balsamic on your tongue (do not swallow) as you take a puff on the cigar - the mix of smoke with the balsamic, it really brings out the flavour intensity of the smoke and the retrohale is quite something in terms of taste and aroma.

I have no clear idea how it works, but it must be as the article explains something to do with organoleptic properties of both the balsamic and the cigar causing them to be intensified/complimenting each other

The taste and flavour of the cigar in the mouth becomes much more intense, when you take a puff and I find the retrohale is just sublime really delightful aroma and taste. I've only tried this with a couple of Cubans so far - Vegueros and Trinidad. Have not tried it with NC cigars or with the recommended Toscano Originale cigars as cited on the website

Vinegar like many other acidic solutions, compounds and foods affects flavour quite profoundly by giving off positive Hydrogen Ions H+

It works in a similar way to Salt, which affects flavour by giving off positive Sodium Ions Na+

Probably why Salt and Vinegar work so well together for Fish & Chips and in Pickling.

Interesting concept and good stuff from [MENTION=13402510]ValeTudoGuy[/MENTION] I'd like to read more about this - it's something I take for granted but actually having read what you've just written I realise I know very little about how flavour and taste work, and less so about the impact of sodium and hydrogen ions on them! Anywhere you can recommend to read up on this or is it a simple wiki job?

I probably would be interested in trying it....but then we get into which version of Soy to try Japanese, Chinese or even Tamari....
